2 pkgs. (8.5 oz. each) Sea Cuisine® Honey Chipotle Salmon
3/4 cup mayonnaise
4 strips cooked bacon, crumbled
1 tbsp. bacon drippings, melted
2 tsp. lemon juice
4 ciabatta sandwich rolls, split
1 roasted red pepper, cut in strips
1 small red onion, thinly sliced
20 baby spinach leaves
Cook Honey Chipolte Salmon as directed on package. Cool 7 minutes.
Meanwhile, stir together the mayonnaise, bacon, bacon drippings and lemon juice in a small bowl for salmon sandwich. Open rolls and spread mayonnaise mixture on cut sides. Arrange red pepper strips, red onion, Honey Chipotle Salmon and spinach leaves on roll bottoms. Cover with top halves of sandwich rolls. Cut in half to serve.
