
4 Sea Cuisine® Herb Crusted Cod fillets
8 cups mixed salad greens
1/4 pound steamed green beans, cut in half
1 yellow bell pepper, cut in thin strips
1 pink grapefruit, cut in wedges
2 small tomatoes, sliced
1 avocado, diced
3/4 cup crumbled goat cheese
Key Lime Dressing (recipe follows)
Preheat oven to 375°F. Bake Herb Crusted Cod according to package directions. Cut into 1-inch pieces.
Arrange greens on 4 dinner plates. Top with green beans, bell pepper, grapefruit, tomatoes, avocado, goat cheese and Herb Crusted Cod. Serve with Key Lime Dressing.
Key Lime Dressing: Whisk together until blended 3 tablespoons key lime or regular lime juice, 2 teaspoons honey-Dijon mustard, 1 tablespoon chopped shallot, and 1/8 teaspoon salt. Slowly whisk in 3 tablespoons light olive oil until blended.
