Homestyle Haddock Twice Stuffed Potatoes

Ingredients:

2 large baking potatoes
2 Sea Cuisine® Homestyle Haddock fillets
2 tbsp. snipped chives
½ cup grated cheddar cheese

Preparation:

Preheat oven to 400°F. Pierce potatoes a couple of times with a fork to allow steam to release while cooking. Bake potatoes 45 minutes or until cooked through. Set potatoes aside to cool.

Cook Homestyle Haddock fillets as directed on package. Cut fillets into small chunks.

Meanwhile, cut cooked potatoes in half lengthwise and carefully scoop out the inside and reserve, creating 4 shells. Using half of the reserved cooked potato insides, mash together with cooked fillets and chives in a large bowl with a potato masher or the back of a large spoon. Stuff potato mixture into the hollowed out potato shells to create a mound. Place in an oven-safe casserole dish. Sprinkle with cheese. Bake until heated through. Serves 2.
