4 Sea Cuisine® Honey Chipotle Salmon fillets
1 cup minced fresh or canned pineapple
¼ cup minced red onion
¼ cup minced red bell pepper
¼ cup fresh lime juice
1 tsp. julienne strips fresh cilantro
1 tsp. extra virgin olive oil
4 cups cooked white rice
1 can (15.5 oz.) black beans, rinsed and drained
½ lime, cut into wedges
Cook Honey Chipotle Salmon as directed on package.
Meanwhile, combine pineapple, onion, red pepper, lime juice, cilantro, and oil in a medium bowl. Set aside.
Combine rice and beans in a large skillet. Heat until warmed through. Place a heaping cup of rice and beans at top of plate. Place 1 salmon fillet across center of plate. Top fillet with salsa. Garnish with lime wedge. Repeat 3 times. Serves 4.
