Macadamia Nut Tilapia with Grilled Fruit & Vegetables

Ingredients:

1 can (6 oz.) pineapple juice
2 tbsp. lime juice
3 tbsp. honey
1 tbsp. canola oil
1/2 tsp. ground ginger
1/3 cup chopped mint or basil
1 Maui onion, cut into wedges
2 plums, cut into wedges
1/4 pineapple, cut into wedges
4 Sea Cuisine® Macadamia Nut Tilapia fillets
3 plum tomatoes, cut into wedges

Preparation:

Combine pineapple juice, lime juice, honey, oil, ginger, and 1/4 cup mint in large food storage bag. Add onion, plums, and pineapple. Push out air, seal bag, and toss to coat.  Refrigerate 1–2 hours.

Preheat oven to 375°.  Bake Macadamia Nut Tilapia according to package directions. 

Alternately thread marinated fruits, vegetables, and tomatoes on four 12-inch skewers. Grill or broil over medium-high heat for 8–10 minutes, turning occasionally and brushing with marinade. Sprinkle with remaining chopped mint and serve with Macadamia Nut Tilapia.
