4 Sea Cuisine® Parmesan Tilapia fillets
¼ cup chopped green olives
2 tbsp. mayonnaise
1 tbsp. chopped red onion
1 tsp. fresh lemon juice
salt and pepper
1 French baguette bread
10 large fresh basil leaves
10 to 12 toothpicks, olives and cherry tomatoes
Cook Parmesan Tilapia as directed on package. Meanwhile, combine olives, mayonnaise, onion, and lemon juice. Season with salt and pepper, to taste.
Slice baguette lengthwise and spread olive mixture across bottom half. Top with fillets. Cover fillets with basil. Place top of baguette over basil. Cut baguette into 10 to 12 pieces. Secure each piece with a toothpick garnished with an olive and tomato. Serves 5 to 6.
