Almond Flounder with Vegetable Bread Pudding

1 pkg. instant stuffing mix
8 oz. cream cheese, softened
1 egg, slightly beaten
1 cup frozen mixed vegetables
2 Sea Cuisine® Almond Crusted Flounder fillets

Preheat oven to 375°F. Prepare stuffing as directed on package. In a medium bowl, using a hand mixer, combine cream cheese with egg until smooth. Add stuffing mix. Stir until combined. Add mixed vegetables. Place stuffing mixture into 2 small greased casserole dishes. Place Almond Crusted Flounder fillet on top of each. Bake on center rack for 25 minutes or until flounder is cooked through. Serves 2.
