2 squares of aluminum foil, 12"x12" each 4 baby red potatoes, sliced thin 1 small red onion, sliced thin 1 cup petite baby carrots salt and pepper 2 tsp. chopped fresh oregano 2 tbsp. butter 2 Sea Cuisine® Lemon Pepper Tilapia fillets
Preheat oven to 325°F. On each square of foil, arrange potatoes, onions, and carrots. Sprinkle with salt, pepper, and oregano. Dot with butter. Place one piece of Lemon Pepper Tilapia on top. Wrap carefully to seal in moisture. Bake the pouches in a single layer on a shallow pan for 35 to 40 minutes, or on a grill, covered, for 40 to 50 minutes. Slice open pouches for presentation. Serves 2.
