Cook Honey Chipotle Salmon as directed on package. Meanwhile, combine avocado and mayonnaise in a small food processor; blend until smooth. Build tortas by placing avocado mayonnaise on bottom bun, then layering salmon, cheese, tomato, and top bun. Place tortas in sandwich press/panini machine and grill. Serve with tortilla chips and salsa or Latin-style slaw. Serves 2.
