3 Sea Cuisine® Macadamia Nut Tilapia fillets 1/3 cup white vinegar 1/4 cup canola oil 1/4 cup soy sauce 2 tbsp. of extra virgin olive oil 4 cups cooked whole wheat rotini, cooled 1 cucumber, cut into thin sticks 2 green onions, thinly sliced 1/2 cup shredded carrots 1 cup cilantro, chopped and divided 1/2 cup macadamia nuts, coarsely chopped
Cook the Macadamia Nut Tilapia fillets as directed on package. Slice into bite-sized pieces. Whisk together vinegar, canola oil, soy sauce and olive oil in a large bowl. Toss in rotini until coated. Toss in cucumber, green onions and carrots until combined. Set aside 3 tablespoons chopped cilantro for garnish. Scatter remaining cilantro in 3 shallow salad bowls. Top with noodle mixture and Macadamia Nut Tilapia pieces. Sprinkle on macadamia nuts and reserved cilantro. Makes 3 servings.
