2 Sea Cuisine® Macadamia Nut Tilapia fillets ½ cup vinegar ¼ cup vegetable oil ¼ cup soy sauce 1 tbsp. sesame oil 1 tbsp. minced fresh ginger 3 cups cooked, unseasoned, ramen noodles or angel hair or spaghetti pasta, cold 2 green onions, thinly sliced diagonally (green part only) ½ cup shredded carrots 4-inch piece seedless cucumber, shredded 2 cups baby spinach 1 tbsp. black sesame seeds (if not available, use white)
Cook Macadamia Nut Tilapia as directed on package. Whisk vinegar, oil, soy sauce, sesame oil, and ginger together in a medium bowl. Add noodles. Stir to coat. Add green onions, carrots and cucumber. Toss to mix well. Divide spinach into two large salad bowls. Divide noodle mixture into bowls with spinach. Place 1 tilapia fillet, cut into strips, on top of each salad. Finish by sprinkling sesame seeds over salads. Serves 2.
