Cook Macadamia Nut Tilapia as directed on package. Meanwhile, in wok or large nonstick sauté pan, heat both oils over high heat. Add ginger and cook for 30 seconds. Add cucumber, carrot, red pepper, and cashews to the fish tilapia stir fry. Cook for 3 minutes or until vegetables are al dente. In small mixing bowl, whisk vinegar and hoisin sauce until well mixed. Add to vegetables with pineapple and toss until incorporated. Serve Tilapia with rice and vegetables. This fish stir fry serves 2.
