2 pkgs. Sea Cuisine® Shrimp Scampi 20 slices, 1/4" thick, crusty French bread ¼ cup extra virgin olive oil 1 cup minced fresh tomatoes 1 tbsp. minced fresh basil ½ tsp. chopped garlic 20 small basil leaves
Cook Shrimp Scampi as directed on package. Brush French bread slices with oil. Toast on a griddle or in the oven at 400°F until browned. Place the tomatoes, basil, and garlic in a mixing bowl. Add ¼ cup of the Scampi Sauce. Place a tablespoon of the tomato mixture on each bread slice. Place one shrimp on top. Garnish with basil leaf. Serve on a passing platter or divide into four portions per serving plate. Serves 5.
