1 pkg. (8 oz.) Sea Cuisine® Shrimp Scampi 1 cup ricotta cheese 1 (14 oz.) precooked Italian pizza crust 2 plum tomatoes, sliced 1½ cups shredded mozzarella cheese ¼ cup basil pesto sauce ½ tsp. red pepper flakes (optional)
Preheat oven to 425°F. Cook Shrimp Scampi as directed on package. Remove shrimp from sauce. Remove and discard tails.
In a small mixing bowl, combine ¼ cup scampi sauce with ricotta cheese. Spread ricotta mixture over pizza crust. Arrange shrimp and tomatoes on top of ricotta mixture. Cover with cheese. Top with pesto, using a spoon to create dollops. Bake until cheese melts and crust is crisp. Serves 2.
