Spanish Tapas with Shrimp

1 small baguette (8 oz.), cut into 1/2-inch-thick slices
1/2 cup extra virgin olive oil, divided
1 pkg (8 oz.) Sea Cuisine® Shrimp Scampi
2 teaspoons hot or sweet smoked Spanish paprika
3 tablespoons dry sherry
1/2 cup diced canned piquillo peppers or roasted red pepper

Preheat oven to 450°F. Arrange baguette slices on a baking sheet. Brush with 1/4 cup of oil. Bake 8 minutes or until golden brown. Set aside to cool.
Cook Shrimp Scampi as directed on package. Cool and discard tails. Split shrimp in half lengthwise.
Heat remaining 1/4 cup olive oil in a skillet over medium heat. Add paprika; cook stirring for 30 seconds. Add sherry and boil 30 seconds. Stir in peppers and cook 1 minute. Stir in White Wine & Herb Shrimp and remove from heat. Serve with prepared toasts. Serve shrimp tapas immediately.
