2 Sea Cuisine® Parmesan Crusted Tilapia fillets 1 cup diced tomatoes 1 cup diced zucchini 1 cup diced summer squash 1 cup sugar snap peas, blanched and halved ½ cup diced red bell pepper ¼ cup diced red onion ½ cup balsamic salad dressing ½ cup large croutons (optional) 1 head romaine lettuce, chopped Salt and Pepper to taste
Place tomatoes, zucchini, summer squash, snap peas, peppers, and onions with salad dressing in large bowl. Stir to coat vegetables. Marinate 10 to 20 minutes. Add croutons and lettuce to vegetables. Divide over 2 large salad bowls. Finish by placing Parmesan Crusted Tilapia atop each salad.
