Recipe

Ingredients:

2 pkgs. (8 oz. each) Sea Cuisine® Shrimp Scampi
2 tbsp. vegetable oil
2 stalks celery, coarsely chopped
1 onion, coarsely chopped
1 green bell pepper, coarsely chopped
1 jar (24 oz.) chunky-style mild or medium salsa
1 can (14 oz.) Mexican-style diced tomatoes, undrained
1 can (8 oz.) tomato sauce
Hot pepper sauce, to taste
Cooked rice, for serving

Preparation:

Cook Sea Cuisine® Shrimp Scampi as directed on package.

Meanwhile, heat oil in a large saucepot over medium high heat. Add the celery, onion and green pepper. Cook 5 minutes or until crisp-tender. Stir in salsa, tomatoes and tomato sauce. Simmer for 3 minutes.

Stir in cooked Shrimp Scampi and cooking liquids. Simmer 5 minutes or until vegetables are tender. Remove from heat and stir in hot sauce to taste. Serve over rice.
