6 medium red bell peppers
2 pkg. (8 oz. each) Sea Cuisine® Shrimp Scampi
1 cup orzo pasta, cooked and drained
1 can (14.5 oz.) diced tomatoes, drained
1 cup finely chopped onion
1 tsp. dried oregano
1/4 tsp. kosher salt
1-1/2 cups (6 oz.) crumbled goat cheese
3 tbsp. grated Parmesan cheese
Preheat oven to 350°F. Coat 13x9x2-inch baking dish with cooking spray. Bring a large sauce pot of water to boil.
Trim tops from peppers. Remove core, seeds and membranes and discard. Add peppers to boiling water and cook for 2 minutes. Invert on toweling to drain. Place upright in baking dish.
Cook Shrimp Scampi as directed on package. Remove and discard tails. Cut shrimp into bite-sized pieces. Place shrimp and sauce in a large bowl. Toss in orzo, tomatoes, onion, oregano and salt. Stir in goat cheese just until combined.
Spoon into peppers, top with Parmesan and cover with foil.
Bake 20 minutes or until heated through. Uncover and bake 5 to 10 minutes more or until golden.
