2 pkgs Sea Cuisine® Shrimp Scampi
3 English or hot house cucumbers
1 package grape tomatoes
1 bunch flat leaf parsley
Cook Shrimp Scampi as directed on package. Meanwhile, cut cucumbers into 1" sections. With a melon ball scoop, or a small spoon, remove center seed area of cucumber, leaving the bottom intact, to make a cup. Place one shrimp, one grape tomato and a leaf of parsley into each cucumber cup and drizzle with Scampi Sauce. Serves 4.
