Sea Cuisine® Summer Herb Crusted Cod fillets ½ cup mayonnaise
2 tsp. fresh lemon juice
6 slices multigrain bread, toasted
2 leaves green leaf lettuce
4 slices ripe tomato
8 slices cooked bacon
Preparation:
Cook Summer Herb Crusted Cod as directed on package. Meanwhile, combine mayonnaise and lemon juice in a small mixing bowl. Smear 1st piece of bread with lemon-mayo mixture. Place 1 leaf of lettuce on smear and 1 cooked cod fillet on top of lettuce. Next, smear lemon-mayo on both sides of 1 piece of bread and place it on top of cod. Finish by placing 2 tomato slices, then 4 strips of bacon and top with last piece of bread, also smeared with lemon-mayo on one side. Repeat again for 2nd sandwich. Serves 2.
