For the Sea Cuisine Potato & Herb Cod

  • 1 package Sea Cuisine Potato & Herb Cod

For the Primavera Veggies

  • 1 ea Yellow Zucchini, Sliced
  • 1 ea Zucchini, sliced
  • 1 ea Red Bell Pepper, diced
  • 1 cup Frozen Corn
  • 1/2 cup Red Onion, sliced
  • 2 tsp Extra Virgin Olive Oil
  • 1 tsp Rosemary, chopped
  • 1 tsp Parsley, chopped
  • 1/2 tsp Salt
  • 1/2 tsp Ground Black Pepper
  • 1/4 cup Grated Parmesan
Tips from the chef: Create a Parmesan or herb vinaigrette to drizzle over the veggies during the last stage to tie the dish together.
  1. Preheat air fryer to 390°F. Place the Cod in the air fryer and cook for 10-13 minutes or until a minimum temperature of 155°F is achieved.
  2. Add all of the veggies along with the oil, herbs, salt and pepper to a large bowl. Toss well and transfer to the air fryer. Cook for 8-10 minutes until tender and lightly charred.
  3. Return vegetables to reserved bowl and toss with half the Parmesan cheese.
  4. To Finish: Divide the veggies equally between two plates. Top each with a fully cooked portion of Cod and garish with the remaining Parmesan cheese.
