Mediterranean Salmon Pesto Pasta
- 2 ea Sea Cuisine Mediterranean Salmon
- 4 oz Campanelle Pasta
- 1/4 cup Pesto
- 1/4 cup Roma Tomato, diced
- 2 ea Lemon, wedge
- 2 tsp Parsley, chopped
Lemon Basil Smash
- 4 ea Lemon, wedge
- 4 tbsp Simple Syrup
- 4 ea Mint, leaves
- 4 ea Basil, leaves
- 4 oz Bourbon
Tips from the chef: Buy a pouch of 90 second Spanish Rice, or Cilantro Lime Rice for a simple addition to your taco board.
- Prepare the Salmon per package instructions.
- Bring 3 quarts of salted water to a boil. Cook pasta according to package instructions and reserve 3 tbsp of pasta water when straining. While pasta is still hot, toss with tomatoes, pesto, and enough of the reserved hot pasta water to reach desired sauce consistency.
- Divide the pasta equally between two bowls. Top each with a fully cooked portion of Salmon and garnish with lemon and parsley.
- In a tall Shaker glass add 2 lemon wedges, simple syrup, 2 mint sprigs, and 2 basil leaves. Muddle to release juice and oils.
- Add the 4 oz. bourbon and ice to the shaker glass and shake until well chilled. Strain into 2 ice filled rocks glasses. Garnish with lemon wedges, basil and mint sprigs.
