  • 1 package Sea Cuisine Mediterranean Salmon
  • 1 bunch Broccolini, trim stems, keeping mostly whole
  • 1 cup Cauliflower, florets, cut 1/2"
  • 1 cup Yellow Squash, sliced, cut 1/2"
  • 2 cup Kale, cut 1"
  • 2 tbsp Extra Virgin Olive Oil, coat veggies before pan roasting
  • 1 tbsp Lemon, juice
  1. Preheat your oven to 400℉. Place the frozen Mediterranean Salmon portions onto a lightly greased sheet pan.
  2. In a large bowl toss the broccolini, cauliflower and yellow squash with the olive oil. Arrange the vegetables on the sheet pan around the Salmon portions. Cook in the preheated oven for 20 minutes.
  3. Remove the sheet pan briefly from the oven. Stir the cut kale into the vegetables and return to the oven to cook for an additional 5 minutes, until the vegetables are tender and the Salmon is fully cooked.
  4. Drizzle the lemon juice across the roasted vegetables and season with salt and pepper if desired. Serve the Mediterranean Salmon atop the bed of roasted vegetables for a nice presentation.
