  • 1 package Sea Cuisine Shrimp Scampi
  • 2 ea Naan Bread
  • 1 tbsp Olive Oil
  • 1 cup Mascarpone
  • 1 cup Roasted Red Pepper Strips, drained
  • 1 cup Frozen Corn
  • 1 cup Zucchini Ribbons
  • 1/2 cup Asiago grated
  • 1/2 tsp Smoked Paprika
  • 1/4 cup Sweet Basil rough chopped
Tips from the chef: This recipe makes 2 Shrimp Scampi Flatbread Pizza's which will serve 2 people for a meal and as many as 8-10 for appetizers.
  1. Preheat your oven to 400°F. Brush the naan with the olive oil and bake for 5 minutes to crisp the naan.
  2. Prepare the Shrimp according to the package instructions, omitting the additional 1/2 cup of water.
  3. Remove the Shrimp from the heat. Mix 1/4 cup of the slightly cooled scampi sauce with the mascarpone in a small bowl. Divide the mixture equally in half and spread across the two pieces of naan.
  4. Divide the cooked Shrimp along with the peppers, corn and zucchini between the two naan. Sprinkle each with the Asiago cheese and a touch of smoked paprika.
  5. Return the naan to the preheated oven and bake for 8-10 minutes until the cheese is melty and lightly browned. Remove from the oven and garnish with the basil before slicing and serving.
