- 1 package Sea Cuisine Shrimp Scampi
- 2 ea Naan Bread
- 1 tbsp Olive Oil
- 1 cup Mascarpone
- 1 cup Roasted Red Pepper Strips, drained
- 1 cup Frozen Corn
- 1 cup Zucchini Ribbons
- 1/2 cup Asiago grated
- 1/2 tsp Smoked Paprika
- 1/4 cup Sweet Basil rough chopped
Tips from the chef: This recipe makes 2 Shrimp Scampi Flatbread Pizza's which will serve 2 people for a meal and as many as 8-10 for appetizers.
- Preheat your oven to 400°F. Brush the naan with the olive oil and bake for 5 minutes to crisp the naan.
- Prepare the Shrimp according to the package instructions, omitting the additional 1/2 cup of water.
- Remove the Shrimp from the heat. Mix 1/4 cup of the slightly cooled scampi sauce with the mascarpone in a small bowl. Divide the mixture equally in half and spread across the two pieces of naan.
- Divide the cooked Shrimp along with the peppers, corn and zucchini between the two naan. Sprinkle each with the Asiago cheese and a touch of smoked paprika.
- Return the naan to the preheated oven and bake for 8-10 minutes until the cheese is melty and lightly browned. Remove from the oven and garnish with the basil before slicing and serving.
