Oven Baked Potato & Herb Cod with Mac & Cheese

Seafood comfort! This dish is guaranteed to help you push through the cold fall & winter months. Try playing around with different cheeses like parmesan and smoked gouda to take this dish to new heights!

  • 2 Sea Cuisine Potato Crusted Cod Fillets
  • 1 tbsp onions, minced
  • 1 tbsp garlic, minced
  • 4 cups milk
  • 6 tbsp flour
  • 6 tbsp soft butter
  • 1 cup cheddar cheese, shredded
  • 1 cup mozzarella cheese, shredded
  • 2 cups elbow macaroni
  • 2 tbsp parsley, chopped
  • 2 tbsp chopped chives (optional)
  1. Bake Sea Cuisine Potato & Herb Cod as per package directions.
  2. Add butter, onions and garlic to a medium sized pot and sweat for a few minutes. Add flour to form a roux and continue to cook on low heat for a few minutes being careful not to brown the roux.
  3. Whisk in milk and bring to a simmer. Sauce will begin to thicken at this point.
  4. Slowly whisk in grated cheese saving about a ¼ cup of cheese for later. Stir frequently, keep heat low! Sauce should be thick enough to coat the back of a wooden spoon. Finish with parsley and season to taste.
  5. Bring a pot of salted water to a boil and cook the macaroni. Drain and combine with the cheese sauce. Pour mac & cheese into a suitable casserole dish and top with the reserved grated cheese. Go ahead and add even more cheese to the top if you wish!!
  6. Place the casserole in the same oven as the Cod and bake until cheese has formed a nice crust and the casserole is bubbling around the edges (approx 20min)
  7. Slice cooked Sea Cuisine Potato Crusted Cod into strips or leave whole and serve on top of mac & cheese. Garnish with chopped chives.
