For the Sea Cuisine Potato & Herb Cod

  • 2 fillets Sea Cuisine Potato & Herb Cod

For the Loaded Potatoes

  • 2 cup Potatoes, Frozen Wedges
  • 3/4 cup Bell Pepper, colorful, frozen pepper and onion strips mix.
  • 1/4 cup Onion, frozen mix with peppers
  • 1/4 cup Cheddar Cheese, Sharp

For the Butter Steamed Spinach

  • 3 tbsp Butter, salted
  • 4 cup Spinach, frozen whole leaf
  • 1/4 tsp Kosher Salt
  • 1/2 tsp Ground Black Pepper

For the Garnish

  • 2 tbsp Scallions, sliced
  • 1/4 cup Bacon, fully-cooked, cut into 1/2" pieces.
  • 1/2 cup Sour Cream
  • 1 ea Lime, juice
Tips from the chef: Try placing your lime and sour cream mixture into a squirt bottle to elevate your presentation and create attractive patterns.
  1. For the Sea Cuisine Potato Crusted Cod & Loaded Roast Potatoes: Prepare a parchment lined and lightly oiled baking sheet. Add the Potato Cod to the pan along with the potato wedges and pepper medley. Cluster the potatoes together on the sheet pan. Cook according to the package instructions in the preheated oven. After 20 minutes, remove from the pan and carefully spoon the pepper medley atop the two clusters of potatoes. Top each cluster with half of the cheese respectively, return to the oven and finish cooking for 5-7 minutes until the cheese is melted and lightly browned.
  2. For the Butter Steamed Spinach: Meanwhile, add the butter, spinach salt and pepper to a pot. Heat over a medium setting stirring occasionally for 8-10 minutes, or until the spinach is fully wilted.
  3. To Finish & Plate: In a bowl whisk together sour cream and lime juice until smooth. Divide the spinach equally between two plates. Top with Potato Cod to one side and to the other side add a cluster of cheesy potatoes. Garnish with the sour cream, bacon and sliced scallions.
